Rice Krispies treats are a classic, but have you had them with peanut butter? So good. Even with the peanut butter this is a four ingredient recipe, and it doesn’t get much easier than that.

Marshmallows + Cereal + Butter + Peanut Butter = Total Awesomeness

To get started making these, the butter and marshmallows are melted together in a large saucepan on the stovetop. Once the butter and marshmallow are completely melted, just stir in 1/2 cup smooth peanut butter.

You can easily nuke the butter and marshmallows in a large bowl in a microwave, which I’ve done plenty of times, but the stovetop works especially well for this recipe. It seemed to melt the marshmallow much better which helped with the mixing that comes right afterward.

Heads up on this – you’re going to need a pretty large bowl for mixing the peanut butter marshmallow in with the cereal. There’s a lot stuff to move around here and you want to make sure all the cereal gets coated.

Once the cereal was all coated (as best as I could get it anyway), I scooped up tablespoon sized portions and flattened them out.

I managed to limit myself to making just one of the big ‘uns, but then I got crazy again and melted some dipping chocolate to drizzle on top. Peanut butter and chocolate are kind of a match made in heaven.

Peanut Butter Cereal Balls
Makes about 5 dozen mini balls (+ 1 large ball)

1 10 oz marshmallows
4 Tbsp butter
1/2 cup smooth peanut butter
6 cups rice cereal
5 dozen mini marshmallows for centers (optional)
drizzling chocolate (optional)

In a LARGE bowl, measure 6 cups of rice cereal and set aside.

In large saucepan melt the butter over low heat and add in the 10 oz of regular marshmallows. Keep stirring over low heat until the marshmallows are completely melted and smooth. Remove the marshmallow mixture from the heat and add in the 1/2 cup of peanut butter. Stir until the peanut butter is completely mixed in with the marshmallow.

Pour the melted peanut butter marshmallow mixture over the 6 cups of rice cereal and stir until the cereal is well coated.

If adding mini marshmallow centers, measure about a tablespoon of the rice cereal mixture and flatten it using your hands. Place the mini marshmallow in the center and press the rice cereal mixture around it with your fingertips. Roll the entire ball in your hands to make it round. If you’re not adding marshmallow centers, just roll the cereal into tablespoon sized balls.

Melt some drizzling chocolate. While that is melting, place the finished peanut butter cereal bars on wax paper. Then, drizzle away to your heart’s desire and let the chocolate set. (I only drizzled chocolate over half of them and left the other half plain.)
